Overall accountabilities are defined in this section. The position of General Manager and Head Chef for The Taste of Smithfield will have a working knowledge of general restaurant operations and is responsible for all aspects and areas of the restaurant.
The Manager is directly responsible for culinary development and presentation to customers, planning, directing, coordinating, staffing, employee relations purchasing, ordering, merchandising & marketing, fiscal management via sales reports, inventory reports and financial statements.The Manager is the "face of the brand" and as such works closely with the Chief Business Development Officer to determine marketing strategies for the restaurant, determine pricing policies, and determine additional needed growth opportunities and sales promotions.
The position is expected to take ownership in providing exemplary customer service and product knowledge through staff development, training, and delegation while creating optimum staff performance.Core ResponsibilitiesResponsible for crafting menus that offer quality meals to customers reflecting both creativity and expertise in food preparation.Determines how food will be priced and presented in a way that maximizes customer satisfaction and the profitability of the business. Manages compliance in all aspects of operations to include initiating, coordinating, and enforcing all program, operational, safety, and personnel policies/procedures.Achieves financial objectives by preparing and maintaining budgets, researching new vendors or suppliers, scheduling expenditures, analyzing variances, controlling labor costs through the payroll process, and initiating corrective actions when needed.Ensures employee life cycle is actively managed to include recruiting, staffing and training, scheduling, coaching, disciplining and evaluating all employees via required performance reviews.Ensures availability of food, merchandise, and other supplies by conducting regular inventory counts tracking actual usage against projections.Maintains stability & reputation of operations by complying with all legal, safety, and company regulations and requirements to include maintaining safety and food quality standards and incorporating all heath code laws and food safety standards into employee training.Interacts with diners to develop positive rapport, solicit guest feedback, and resolve guest satisfaction matters.
Periodically evaluates restaurant equipment for repairs and maintenance and schedules appropriate services. Bachelor's degree from an accredited four-year college or university and 5+ years related culinary or restaurant experience; or equivalent combination of education and experience.2+ years of demonstrated experience in team management/development or project leadership is required.Experience working in the restaurant industry, preferably in a supervisor or managerial role.Previous experience as a Chef or Cook preferred.Knowledge of culinary techniques and equipment preferred.Behavioral Competencies: Customer focus, strategic planning, judgement, decision-making, planning and organizing, problem solving, coaching, teamwork, adaptability.Technical Competencies: Computer proficiency, MS Office software applications, POS experience.Skills: Strong leadership, motivational, interpersonal relations & communication skills.Food safety certification.Supervisory ResponsibilitiesProvides leadership and guidance to all employees in the Restaurant.Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws.Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and assisting in providing appropriate resolutions.Work Environment & Physical DemandsFast-paced, high-pressure environment requiring the ability to spend significant time moving between different areas of the establishment.
